Our first 100% Cab Sauv release is ready and tasting magical, with classic dark fruit, tobacco, and cedar-sauna notes that remind us of the holidays 🌲. Although there's some classic Cab notes, generally speaking this is not your classic Cab ... which you might have already guessed. It's brighter and livelier than other Okanagan Cabs we've tried.
Coming from a single plot near Oliver, it spent 14 months in 40% new French oak and mellowed in bottle for another 8 months. It can could be cellared over the next 5+ years.

Along with our 2019 Tempranillo, this is the first wine we've ever fined - gently softening the tannins in barrel by using a traditional French egg-white fining process. The eggs were sourced from our winemaker's own chickens that roam his vineyard. Similar to other fining methods used by almost every other winery, the egg-white is 'racked' out and does not end up in the bottle.
